I own an '82 Maxim too, and this is my 2nd one. The Maxims are almost bullet-proof, and every problem I've ever had with mine relates to fuel delivery. Try replacing the fabric filter above the fuel petcock (the filter that rises up into the fuel tank). I'd try that before pulling apart and cleaning/rebuilding the carbs. If you cannot locate a source for a new one, these filters (and other parts for these old bikes) are usually available used on eBay.
